Yummy yummy Let’s fill our tummy with Vada Pav!

Ready in 35 minutes

Prep Time – 15 minutes

Cook Time – 20 minutes

Makes 6  pieces

Aloo/ Batata mixture requirements:

  • ½ tsp mustard
  • pinch of hing / asafoetida
  • few curry leaves
  • Ginger garlic paste – 1 tsp
  • ¼ tsp turmeric/haldi
  • 3 big potatoes/batata (boiled & mashed smoothly)
  • ½ tsp salt
  • ½ tsp oil

Besan batter requirements:

  • ¾ cup besan/gram flour
  • ¼ tsp turmeric/haldi
  • ¼ tsp red chili powder
  • ¼ tsp salt
  • ½ cup water

Garlic chutney requirements:

  • 1 tbsp oil
  • ¼ cup garlic 
  • 1 tbsp peanut roasted
  • ¼ cup dry coconut – optional
  • 1 tbsp Kashmiri red chili powder
  • ¼ tsp turmeric
  • ½ tsp salt
  • Fried besan batter

Green chutney requirements:

  • 1 cup coriander leaves
  • 3 clove garlic
  • 3-inch ginger
  • 2 green chili
  • ½ tsp salt
  • ½ cup water
  • 1 tbsp lemon juice

Preparation of aloo mixture for vada

  1. Take the mashed potato Make sure it’s smooth.
  2. Heat oil in a  kadai heat and add mustard seeds. Wait for it to splutter.
  3. Add a pinch of hing and ginger garlic paste then add a few curry leaves.
  1. Add ¼ tsp turmeric and saute until a good aroma is felt. Then add mashed potato and salt and heat for a minute to mix well.

  2. Switch off the stove and let it cool. Once cooled make small balls round

Preparation for Vada

  1. Take besan, add ¼ tsp turmeric, ¼ tsp chili powder, and  ¼ tsp salt. Mix well using a spoon. Add water and make a batter. Make sure the batter is not that thick.
  2. Dip the aloo ball in prepared besan batter and coat well.
  3. Heat the oil and deep fry the coated aloo.
  4. Take the vada out of the oil and drain the excess oil. Keep aside.

Preparation Garlic chutney

  1. Use the besan batter and fry it using the thin batter(similar way as the residue is left after the pakora fry).  Take this out and keep it aside.
  1. Heat 1 tbsp oil and add ¼ cup garlic, saute on low flame until it turns golden brown.
  1. Take the garlic out.
  1. Now add roasted peanuts. 
  1. Add salt, and red chili powder and blend it. No water to be added.

TIP: If the garlic chutney has moisture, then add roasted bread and blend it. The bread will absorb moisture.

Preparation for Green Chutney

  1. Take the coriander leaves. Add garlic, ginger, and green chilli.
  2. Put the above in a blender. Add salt and lemon juice. Blend it by adding little water. Let it be a thick paste, do not let it be watery.

Preparation for Fried Green Chillies

  1. Take 6-8 green chillies. Cut the green chillies from between so that it doesnt splutter.
  2. Heat oil and add green chillies.
  1. Take the green chilies and add salt to it.

Preparation for Vada Pav

  1. Now take the pav and put the garlic chutney on it to the base.
  1. Place vada in between the pav and serve with green chutney and green fried chillies.
